Tartest Lemon Tart

I think I'd really like this as a full-sized tart. I don't have a tart pan yet, so I tried using some little brioche or quiche molds (I'm not really sure what they are). They seemed to be the right size for a half batch.

I had a few challenges with this week's selection. I had melted my butter in the microwave and forgot it there, so no butter. I kind of overfilled on both the dough and the filling, so they bubbled over and didn't leave much lemon. Then I had trouble figuring when they were actually done, they didn't seem 'set' until they were overdone (oops!). I'm going to have to try this again when I get a tart pan :)

I have those same brioche pans - too bad all the filling bubbled out, because that was a great idea.

And at least you liked yours - ours was a no-go!

I had the same problems with my lemon tartlets -- they bubbled up and then sank in the middle. Yes, this recipe seems to want to be a big tart!

I have some of those. Have been trying to find the right way to use them. Think you may have found it for me. They are so cute. And so much healthier. Good!!!
